Who doesn’t like chocolate cake? Here is a very simple recipe that will make your friends and family envious! Although there’s lots of sugar, it’s a cake right, its uses very simpa ingredients without any nasties and by adding a very dark chocolate with more than 65% cocoa you make this a decent chocolate cake…
Here comes the recipe:
Ingredients for 1 log:
1 cup unsalted butter (225 g), melted
1 cup unrefined sugar (200 g) – I use any organic unrefined cane sugar. It is unrefined and a healthier alternative to other sugars.
4 egg yolks (fresh) – you can use the whites in another recipe… Chocolate mousse or what about adding them to an omelette?!
200 g of dark chocolate I used Nestle Dessert Noir Corse as it’s got 65% cocoa in it
18/24 rich tea type of biscuits
Preparation
In a large bowl,
- Beat the eggs and the sugar until fully incorporated, the mix should become pale yellow.
- Add the melted butter then the melted chocolate and mix thoroughly,
- Put your biscuits in a bag and crush them to get big crumbs and add them to the mix. We should obtain now a thick dough.
- Put the dough on a large cling film sheet (it needs to be big enough to roll your dough in a log shape – Think of a Yul log. Then put in the fridge for 3 to 4 hours.
- Remove the cling film and place your log on a serving plate, and sprinkle generously with iced sugar
